It is on the Aspe Valley’s Mountains that this Tomme is produce with sheep’s milk by Maxime Bajas. With his basco-bearnaises sheep he produces with his family in an artisanal way, sheep are still milked manually !
This cheese has a fruity and floral taste, lactic, persistant and slightly animal.
In early summer, their sheep are brought on the « alpages » (higher in the mountain) so they are fed with a rich and varied flora which will give to their milk this amazing and unique taste !
