Manchego is a traditional cheese from Spain. Our Manchego curado is Artisanal and comes from Central Spain, in Castilla-La Mancha region.
HOW?
Manchego is produced from raw sheep’s milk.
It is called pressed cheese, which means that after having sliced the curds, the producers will press the curds together to form a cylinder shaped cheese.
Before sending the Manchego cheese to maturation producers will soak it in wax to protect it !
Our Manchego is Curado, which means that it has matured for over 6 months.
The quantity may vary to more or less 10%
