This product can be compared to its cousin “Sainte-Maure de Touraine”.
It is produced by the Guillet Family at la Ferme du Bois-Rond in Pussigny (Loire Valley).
This cheese is composed of a rye straw and is also rolled into birch coal and salt to protect it from insects but also to give it this lovely light blue/grey colour.
Very delicate and mild, this cheese, while ageing will definitely become stronger!
