Selles-sur-Cher has a blue/grey appearance due to the vegetal ashes sprinkled on it before maturation. Back then, it was used to protect the cheeses.
Our Selles-sur-Cher is very fresh in texture, has a wonderful nuttiness mixed with a mild fresh and herbaceous feeling and comes from Loir-et-Cher.
