Isère ! That’s where this absolutely wonderful piece comes from. It’s a Saint-Marcellin.
Originally this cheese was made with all the leftovers in the farms: with goat, sheep, cows milk. Hence the size but also the fact that children would easily carry the cheese to school in their pockets ! Much tastier than a phone, right ?
We have selected our Saint-Marcellin from La Ferme de Plantimay, produced by Sylvain and his family since 3 generations (and still going).
When we receive it it’s fresh (about 7 days of ageing!), milky and creamy. Now it’s creamy, mild and terribly tasty.
Produced with raw cow’s milk.
