Mimolette was created in the 17th century during the war between France and Netherlands. Louis 14th asked his Minister Colbert to find a solution to not import Edam cheese from the Netherlands.
Coming from northern France, Mimolette has a surprising sweet taste that reminds caramel, and has a long creamy after taste.
It’s not recommended to eat the rind of Mimolette.
