Laguiole is a very particular cheese as, a few years ago, it almost disappeared as most producers of this cheese had stopped their activity. However a cooperative Jeune Montagne has started producing it again, gathering some old producers and younger people ! and that’s how they saved this wonderful and ancestral cheese.
Laguiole is a hard cheese which is very recognizable from its nutty and creamy taste.
Coming from Aveyron region (same region as Roquefort), our Laguiole has been matured for over 210 days, which brings more intensity and a thicker and grainy rind that some cheese lovers will consider as a must !
