Original cheese from Switzerland, l’Etivaz is a raw milk cheese produced up in the mountains. It is a protected designations that requires the producers to produce the cheese at least 1,000m high in the mountains
With a hard texture, similar to Comté, l’Etivaz is a pressed cooked cheese. The cooking process is still done with a real fire, which adds a lot to this traditional cheese !
L’Etivaz has a very characteristic taste, between mild tropical fruits and lactic taste. It is one of Switzerland’s most iconic cheeses.
