Torta del Casar is an iconic raw sheep milk cheese from Western Spain, in the region of Extremadura. It is a PDO and produced exclusively with Merino (also famous for its wool) and Entrefina sheep milk
Torta del Casar is very appreciated for being a vegetarian cheese. This means that it is not produced with animal rennett (unlike most cheeses).
It is also very easy to prepare: cut off the top of the cheese and just scoop into the divine silky paste of Torta del Casar! You can enjoy a very creamy, delicate and slightly bitter cream (due to the use of a vegetarian rennett!)
